I am trying to eat healthier. This is hard to do when your hubby eats like a 4 yo and is super picky. I don't want to cook separate dinners so, I have started focusing on my lunch. Cannellini (also known as white kidney beans) are neutral and remind me of pasta. They lend themselves perfectly to this creamy sauce
I threw this together with what I had on hand but was inspired by a dish I had in Tuscany and still dream about to this day. The quantities are guesstimates - adjust to your taste.
In a saucepan, saute onions in EVOO. When onions are soft, add broth, garlic, pesto and beans. Saute for 5 minutes, adding more broth if needed. Add in 1/2 bag of spinach and stir to slightly wilt. Add in cheese to taste and serve. This would also make an excellent dinner side dish.

- 2 slices white onion, diced
- chicken broth (1 to 2 C)
- 1 tsp garlic
- 2 tsp pesto
- cannellini beans, drained and rinsed
- 1/2 bag of spinach
- 1/4 C a nice cheese - I used Trader Joe's Parmesan, Romano & Asiago Cheese blend
