Elle's Spicy Chili Lime Chicken Tacos

If you're looking for a bold, flavor-packed dinner that comes together with almost no effort, you're going to love this Spicy Chili Lime Chicken. Don’t let the ingredient list fool you—it’s a simple, throw-it-in-the-slow-cooker kind of meal that rewards you with juicy, zesty chicken that's perfect however you serve it. Mark loves his stuffed into soft tacos, I pile mine over crisp shredded cabbage, and honestly, it’s just as good in crunchy hard shells. However you plate it, one thing’s for sure: this dish brings the heat, the tang, and all the craveable comfort you need. Let’s get cooking!


Ingredients
  • 2 pounds boneless skinless chicken breasts (3 to 4 large chicken breasts)
  • ½ of a small sweet onion diced
  • 2 cloves garlic minced or grated
  • 1 tablespoon brown sugar (or honey)
  • 2 canned chipotle chiles in adobo, chopped (not the whole can, just the 2 chiles
  • 2 teaspoons smoked paprika
  • 1 teaspoon oregano
  • ½ teaspoon cumin
  • ¼ teaspoon cinnamon
  • ½ teaspoon salt + more to taste
  • ⅓ cup salsa + more for serving
  • 1 (4 ounce) can diced green chiles
  • juice of 1 to 2 limes
  • ½ cup fresh cilantro chopped
  • 8 Old El Paso Soft Tortilla Taco Boats warmed
  • shredded cheese + guacamole for serving
Steps
  1. In the bowl of your crockpot, combine the chicken, onion, garlic, brown sugar (or honey), chipotle chile peppers, paprika, oregano, cumin, cinnamon, salt, salsa and diced green chiles. Add ½ cup water, cover and cook on LOW for 6 to 7 hours or on HIGH for 4 to 6 hours. Once the chicken is done cooking, shred with two forks and then stir in the lime juice and cilantro.
  2. Serve the chicken in warmed taco boats, tortillas or use in wraps. Top as desired.

Chinese Honey Garlic Chicken with Fresh Vegetables

This is so delicious and easy. I think the orange marmalade makes it perfection! Adding the vegetables near the end means they are still crisp and the dish tastes fresh even though it was done in the crock pot. Enjoy!

Ingredients

  • 2-3 in bone- skin-on chicken breasts
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1/4 cup bittersweet orange marmalade
  • 1/4 cup hoisin sauce
  • 1 tsp sriracha sauce
  • 2 Tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup medium yellow onion diced (about 1/2 )
  • 1/2 tsp red pepper flakes
  • 1 Tbsp cornstarch + 2 Tbsp water
  • Sugar snap peas
  • Broccoli
  • Can of water chestnuts
  • Cashews
  • Sliced scallions for garnish
  • Sesame seeds for garnish
  • Fresh cilantro for garnish
Steps
  1. Place the chicken breasts in the bottom of your slow cooker, sprinkle with a little salt and pepper.
  2. In a separate bowl, whisk together the honey, soy sauce, orange marmalade, hoisin sauce, garlic, sriracha, onion, olive oil and red pepper flakes.
  3. Pour sauce over chicken breasts.
  4. Cover and cook on LOW for 4-5 hours until the chicken is cooked through.
  5. Drain liquid into a saucepan but leave chicken in the slow cooker. Break chicken apart but don't shred too much. Leave shredded chicken in the crockpot.
  6. Add cashews, water chestnuts, sugar snap peas and broccoli to chicken in crockpot.
  7. In a small bowl, whisk together the cornstarch with water. This is called a slurry, and it will thicken the sauce.
  8. Transfer the liquids from the slow cooker to a small saucepan over medium high heat and whisk in the cornstarch mixture. Bring sauce to a boil, then simmer until it reduces and thickens slightly. This took me about 3-4 minutes.
  9. Whisk and turn slow cooker on HIGH. Whisk occasionally until sauce thickens.
  10. Pour half the sauce over shredded chicken and toss to combine. Top chicken with scallions and sesame seeds.
  11. Reserve the second half of the sauce for drizzling over the chicken as desired.
  12. Serve chicken over Rice.

Elle's Easy Crock Pot Roast

Ingredients
  • Roast (I like cross rib)
  • Lawry's seasoning salt
  • Garlic Powder
  • Salt & pepper
  • McCormick Montreal steak seasoning
Steps
  1. Season with lawry's, garlic, salt & pepper and a bit of Montreal steak
  2. Put in crock pot on high and cover
  3. After 1/2 time turn down to low for remainder of time
  4. If you want to add veggie, add after you turn to low
  5. Check if veggies are cooking too quickly you may need to remove to a plate and microwave right before serving to heat
  6. Beef roast size Cooking time LOW HIGH
  7. 2-3lb / 1-1.5kg 7-8 hours 3-4 hours
  8. 3-4lb / 1.5-2kg 8-9 hours 4-5 hours
  9. 4-5lb / 2-2.5kg 9-10 hours 5-6 hours
  10. 5-6lb / 2.5-3kg 10-11 hours 6-7 hours
  11. 6-8lb / 3-4kg 11-12 hours 7-8 hours
Notes
  • I use the times as rough guides and go more by when the roast is fork tender and comes apart easily. 
  • I sometimes cook my roasts from frozen. Rinse, season and put in crock pot and add a bit more time. 

MaryEllen's 4 Ingredient Slow Cooker Pork Chops

My good friend MaryEllen gave me permission to post this. It is so easy and really good. Mark thinks he doesn't like pork chops but every time I make this he has to admit that he loves it! Easy and delicious and makes leftovers - you can't ask for more than that!

Ingredients
  • 4 pork chops dusted with s&p
  • 1/2 packet brown gravy
  • 1/2 packet onion soup mix
  • 1 can cream soup (mushroom)
Steps
  1. Mix all in crock pot
  2. Cook on low for 5 to 6 hours till done
