Ingredients
- 1 lb boneless skinless chicken breasts cooked and shredded or chopped OR 2 breaded chicken breasts, cooked & sliced
- 2 oz packages dry ramen, broken into fine pieces (discard seasoning packets)
- 1 cup sliced or slivered almonds
- napa cabbage, shredded fine
- 2 cups shredded tri-mix cabbage
- 1 cup large carrot peeled and chopped into thin sticks 3/4
- 4 green onions sliced
- cilantro
- edamame
- 2 Tbsp toasted sesame seeds
- DRESSING:
- 1/2 cup olive oil
- 1/4 cup + 2 Tbsp apple cider vinegar OR white wine vinegar
- 1/2 cup granulated sugar
- 1 1/2 Tbsp soy sauce
- 1/2 tsp freshly ground black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried ginger
- 1 tsp garlic, minced
- Salt to taste
Steps
- Whisk together all of the dressing ingredients until well blended, microwave several minutes to dissolve sugar. Season to taste, set aside.
- Combine all ingredients. Drizzle dressing over top and toss to evenly coat. Serve immediately.
