Fabulous Recipe Website - The Chunky Chef

I am a believer in sharing the love so that is what this post is about...and I do LOVE the Chunky Chef (aka Amanda)  She has a fabulous website with loads of recipes and it is very easy to navigate/search and find something that may appeal to you:
First off, I think my husband is the World's Pickiest Eater. I have considered renaming Mark to Mikey (remember those Life Cereal commercials?)  I have made two different recipes from Amanda's website:

The first was a fabulous hearty One Pot Chicken Parmesan Pasta. The recipe was delicious and I wouldn't change a thing. Mark also LOVED the leftovers.

The second was this amazing One Pan Cheesy Jalapeno Chicken. The only two changes I would change is to chop up the chicken beforehand (we liked it wrapped in tortillas) and I would dice the jalapenos vs sliced. Both of these are pesonal preference so if you want, make it as is and it wll still be FABULOUS.

The 3 things I have noticed with Amanda's recipes are:
  1. they are clear and easy to follow;
  2. they are delicious;
  3. and finally, Mark likes them!  This is a win/win as it makes me look forward to trying more recipes from The Chunky Chef.

Elle's Easy Black Bean Soup

I made this tonight and realized how fabulous it is so I thought I would repost it. I am freezing the leftovers and will take some with us this weekend when we go up North - yum!

Are you noticing a pattern that all my recipes have the word "Easy" in the title :-)


1 medium onion, chopped
Boneless skinless Chicken breast, diced (optional)
2 cloves garlic, minced
1 tsp oregano
1 tsp cumin
1 - 15 oz can chopped tomatoes
1/4 C salsa
2 - 16 oz cans black beans (undrained)
1 - 14 oz. can chicken broth
1/4 C cilantro, chopped
avocado, diced (optional)
shredded cheese (optional)
taco chips (optional)

In a pot, heat olive oil and add onions (and chicken if desired).  Brown 3 to 5 minutes.  Add rest of ingredients except cilantro.  Bring to a boil and simmer, stirring occasionally for 5 minutes.  Add cilantro and simmer for an additional 5 minutes till thoroughly heated through.  If desired, sprinkle with cheese and serve with taco chips.


Air Fryer Garlic, Almond, Cheese Dinner

Did you notice the title of this is just Garlic, Almond, Cheese "Dinner".  That is because you can use this on any type of fish or chicken.  It is a versatile easy recipe and you could always do it in the oven but,as you know, I love my Air Fryer and that is what makes it so crispy as well as really HOT!

For the parmesan cheese, I love this Parmesan Reggiano cheese from Trader Joe's but any high quality cheese will do.

Air Fryer Garlic, Almond, Cheese Dinner
2 pieces fish or 2 pieces of chicken
1 egg, beaten
1/2 tsp Old Bay Seasoning
1/2 tsp Garlic Powder
1/2 C Raw Sliced Almonds
1/4 C Parmesan Cheese

Coat fish or chicken in beaten egg.  Combine rest of ingredients in a coffee grinder and pulse to mix and slightly break up the almonds. Coat the egg covered fish/chicken in the spiced almond cheese mixture and place on parchment paper in the air fryer. Put a small slice of butter on top each piece. Cook at 400F for 12 to 15 minutes or till done

This picture is blurry as the heat from the air fryer fogged up my camera!  This was with cod and was oh so delicious! The broccoli was cooked the night before and I simply added it to the airfryer for the last 2 mintues with a bit of salt, pepper and butter.
