Elle's Easy Air Fryer Chicken

 Ok, this is more a 'concept' than a recipe. It is embarrassingly simply but, if you haven't tried chicken in the air fryer, hopefully this will motivate you.


It is three ingredients - chicken, olive oil and your favorite spice. That's it!


Ingredients
  • Chicken
  • Olive Oil
  • Spice (my favorites are Montreal Chicken with Garlic Powder or Lemon Pepper but rosemary and garlic are also fabulous)
Steps
  1. Pour olive oil over raw chicken.
  2. Sprinkle with your favorite spice
  3. If you have time, put in fridge to allow to marinate
  4. Preheat air fryer to 400F
  5. Put seasoned chicken (including a fair coating of olive oil) into air fryer and cook (9 to 12 minutes depending on thickness)




The Best Soft and Chewy Snickerdoodle Cookies

Mark LOVES his snickerdoodle cookies and claims these are "the perfect recipe". I believe it is because of the softness (I use more cream of tartar than most) and the spice (he loves his cinnamon). Also,  unlike most snickerdoodle cookies, not only the ingredients but storing them in a plastic bag inside the cookie tin mean they stay moist.


Ingredients

  • Snickerdoodle Dough:
  • 2 ¾ cups all-purpose flour
  • 2 ½ teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter just softened
  • 1 ½ cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Cinnamon Sugar Coating:
  • ⅓ cup sugar
  • 3 tablespoons cinnamon
Steps
  1. Preheat oven to 350°F.
  2. In a large bowl, mix together flour, cream of tartar, baking soda, and salt together. Set aside.
  3. In a stand mixer, cream together butter and sugar. Add eggs and vanilla and blend well.
  4. Make cinnamon mixture by combining the two ingredients in a small bowl.
  5. In a small bowl, combine ⅓ cup sugar and 2 tablespoons cinnamon.
  6. Using a small cookie scoop to scoop out dough, roll into a ball and then roll into the cinnamon sugar mixture. Roll twice to completely cover the balls.
  7. Use a small cookie scoop to scoop out dough, roll into a ball and then roll into the cinnamon sugar mixture- twice.
  8. Place 2 inches apart on an ungreased cookie sheet.

  9. Bake for 10 – 12 minutes. Let sit on the cookie sheet for a few additional minutes before removing to a wire rack to cool.
  10. Store in a plastic bag and then in a cookie tin to keep moist.

 

Air Fryer Sausage and Cheese Balls

These tasty breakfast morsels are a staple in our freezer.  So easy to grab a few, pop them in the microwave and have a hearty snack or breakfast/lunch/dinner accompaniment. The ingredients below are for double the usual amount as I like to have them on hand. The mixture of the spicy and italian sausage makes the perfect combination of flavors.



1 lb pork breakfast sausage spicy
1 lb italian sausage
1 C shredded cheddar cheese
2 oz cream cheese, softened (mic for 15 seconds)
2 large egg
diced red or white onion - or both - really adds something special!

Mix all ingredients
Form into 32 x 1 " balls
Place the balls in the air fryer in batches
Cook 400F for 12 minutes
Sausage balls will be browned outside and have internal temp of at least 145F
Serve warm or freeze ziplock bag.
Pull out a couple balls and microwave 1 minute  or till hot for a quick breakfast

Rosemary New Potato Dinner Hashbrowns

Mark loves his potatoes and this is a recipe I have been making for ages. When I buy a bag of new potatoes, I always make sure to work this one in to the rotation.



Ingredients
  • 3 or 4 new potatoes chopped in 1/2" squares
  • olive oil
  • salt
  • pepper
  • rosemary
Steps
  1. Toss new potatoes in a couple teaspoons of olive oil to coat
  2. Add spices and toss
  3. Put on foil in air fryer
  4. Cook at 400F for 20 minutes turning at half way mark
  5. Check to ensure they don't overcook
