Air Fryer Tilapia Parmesan

I am not a big tilapia fan but, this is so rich and cheesy tasting that I could not wait to have the leftovers. I have made this several times and find it so decadent.


  • tilapia fillets (defrosted)
  • Old Bay Seasoning (optional)
  • 1/4 cup parmesan regiano cheese from TJs
  • 2 tablespoons butter
  • 1 1/2 tablespoons mayonnaise 
  • 1 tablespoons lemon juice 
  • 1 teaspoon dill (optional)
  • seasoning salt and pepper

Sprinkle Old Bay Seasoning on fillets.
Put tilapia fillets on a foil lined air fryer
Cook 400F for 3 minutes  
Combine remaining ingredients
Flip tilapia and divide the parmesan mixture over the uncooked sides of the tilapia
Return to the airfryer and broil an additional 3-4 minutes making sure not to overcook the fish.

(You can do this under the broiler for the same times as above. Put the rack on the top rack closest to the broiler)

Chicken Almondine - Air Fryer / Keto

I have really been enjoying my air fryer and experimenting with doing main course dishes. I love that it easy prep, you can leave it while it is cooking and easy clean-up!  My kind of meal :-)


This was easy, tasty and decadent!

Chicken Almondine
1/4 C slivered almonds
2 chicken breasts
2 Tbsp mayonnaise
1 Tbsp dijon mustard

Pulse the almonds in a food processor or chop till finely chopped
Slice chicken breasts in half lengthwise
Mix the mayonnaise and mustard in a bowl
Coat chicken in the mayo/mustard mixture
Cost chicken in the chopped almonds to fully coat
Place on parchment paper in air fryer
Cook 350F for 25 minutes or when chicken reaches internal temp of 165F

Air Fryer Keto Chocolate Brownies


Mix, bake & eat - doesn't get any better than this!!!  Ooey gooey richness that doesn't need a frosting or carbs! Perfect for an indulgence!

Air Fryer Chocolate Brownie
1/4 C butter, melted
1 C almond flour
1/2 C rounded (not level) granular erythritol
1 tsp vanilla extract
1/4 mayonnaise
1/4 C unsweetened cocoa powder
2 large eggs

Mix all ingredients till smooth
Pour into either a rectangle glass container
Place into air fryer
Cook 300F for 25 minutes (till toothpick inserted in middle comes out clean)
Cool completely



Air Fryer Keto Cookies - 3 ways!

I love that this only takes a few ingredients and so little time. By changing just a couple ingredients, I made 3 different cookies. Easy peasy and delicious! I think my favorite is variation #1 or #2. Mark's is definitely #3

AIR FRYER KETO COOKIES - Basic Recipe

1 C almond flour
1 tsp baking powder
3 Tbsp Swerve
2 oz cream cheese, softened
1 egg

Mix all ingredients in a bowl till wet dough forms
Place bowl in freezer for 20 minutes till dough is cool and you can roll into a ball
Roll 10 balls and put on parchment paper. Press down to slightly flatten
Cook 400F for 7 minutes
Cool COMPLETELY before moving from parchment (or you will have a crumbly mess!)

VARIATIONS
1. ALMOND COOKIES
Add 1 tsp of almond exctract (or your favorite flavoring) before freezing the dough.


2. AIR FRYER KETO THUMBPRINT COOKIES 
10 tsp preserves like raspberry or cherry 

Make above. After pulling from freezer and forming into balls on parchment paper, put a thumbprint in each cookie. If they start to get too moist, pul the parchment paper on a cutting board or cookie sheet and pop back into the freezer to firm up a bit. Fill each thumbprint with 1 tsp jam in the indent

Cook 400F for 7 minutes
Cool COMPLETELY before moving from parchment (or you will have a crumbly mess!)



3. SNICKERDOODLE COOKIES
1/2 tsp ground cinnamon
1/4 C Swerve

Mix cinnamon and swerve together.  After rolling in to balls, roll in cinnamon &  swerve mixture then flatten  slightly before cooking
