My Sister Patty's Amazing Garlic Bread

My sister was down visiting recently and I asked her to prep the garlic bread for one of our meals. When we sat down for dinner, all of us (including picky Mark!) were oohing and aahing over the bread. AMAZING! 

Ingredients
  • French loaf
  • 1 stick butter, softened
  • ½ to ¾ tsp garlic powder
  • ½ to ¾ tsp onion powder
  • 3 good shakes of worcestershire sauce
  • ½ C parmesan cheese (the good shredded kind - not the green can!)
Steps
  1. Place all ingredients in a bowl and mix well

Carnivore Bacon Gruyere Quiche / Frittata

 I love easy recipes and if they are make ahead, then it is a double win! This checks all the boxes and is delicious. Enjoy! 



Ingredients
  • 8 slices of bacon, cooked and chopped
  •  
  • 8 eggs
  •  
  • 1 ½ cups of Gruyere cheese, shredded
  •  
  • ½ cup of heavy whipping cream
  •  
  • salt
  •  
Steps
  1. Grease a 8x8 baking pan
  2. Combine eggs and heavy whipping cream, then add salt and pepper. Beat the mixture together and set it aside
  3. Mix bacon with shredded cheese, reserving some cheese and bacon for topping
  4. Spread the bacon and cheese mixture evenly in the prepared baking pan
  5. Pour the egg mixture over the bacon and cheese, ensuring everything is covered without mixing
  6. Bake in a preheated oven at 375 degrees for 45 minutes
  7. After baking, sprinkle the reserved bacon and cheese on top and return to the oven for a minute or two to melt the cheese
  8. Remove from the oven and let it cool slightly before serving

Egg Muffins - Three Versions - Make Ahead

There are three versions below...one is just with mayonnaise and the other adds flour and egg to the mayonnaise for a thicker coating. They are both DELICIOUS! (Note, if preparing both versions, I put a toothpick in the non flour version so I know which ones are mine!) When reheating, I put them frozen on a paper towel (to absorb any moisture) on a plate in the microwave for about 1 minute.


Ingredients
  • OPTION #1 Cooked
  • Ground Beef (about 1 C)
  • Taco Seasoning
  •  
  • OPTION #2
  • Chicken Sausage, chopped
  •  
  • OPTION #3, Cooked
  • Mild Italian Sausage (about 1 link)
  •  
  • red or white onion, optional
  • 5 or 6 Eggs
  • 1 C cheese, grated
  • S&P
Steps
  1. Combine meat from Option #1,2 or 3 with rest of ingredients
  2. Measure ¼ C mixture into greased silicone liners
  3. Cook at 330F for 12 to 13 minutes

Air Fryer Baked Chicken Fingers - Two Ways

Ingredients

  • 1 lb chicken tenderloins , cut in half lengthways into strips (or breasts but, they aren't near a tender)
  • 2 ¼ cups pork rind crumbs (better than panko as they have even texture)
  • Olive oil spray
  •  
VERSION ONE
  • 1 egg
    Mayonnaise for coating with S&P for flavor (optional, add garlic and onion powder)
  •  
  • Dipping mayo sauce
  • 2 large eggs
  • 3 tbsp flour , plain / all-purpose
  • 2 tbsp mayonnaise or 1 tbsp extra virgin olive oil
  • Pinch of salt
Steps
  1. Coat chicken tenders in mayo or dipping mayo and then pork rind crumbs
  2. Spray generously, bake 15 to 20 minutes on rack or in an air fryer at 400F

Marvelous Marmalade Chicken

This has vibes of "Chinese" flavors and is simple and yet delicious.

Ingredients

  • ⅓ cup orange or apricot marmalade/preserves
  • ¼ cup chili sauce
  • 1 tablespoon hot mustard
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 4 boneless skinless chicken breast halves 4 ounces each
Steps
  1. In a medium saucepan, combine the apricot preserves, chili sauce, and hot mustard. Stir together and heat through on medium-low heat.
  2. Pound the thicker end of each chicken breast to even it out so they will cook more evenly. Pat chicken dry with a paper towel. Spritz chicken with oil and rub to coat. Sprinkle on the salt and pepper. Place the chicken in the air fryer basket.
  3. Cook at 380°F/193°C for about 10 minutes.
  4. At the halfway point, turn the chicken and brush on some of the sauce onto the chicken breasts. Continue cooking until an instant read thermometer inserted into the center of the thickest part of the chicken reads 155°F/68°C.
  5. Let chicken rest for 5 to 10 minutes to finish cooking, then slice and serve.
PS - I know the picture isn't the most appetizing but trust me, it is delicious!

Italian Wedding Cookies Recipe

Mark adores the Italian Wedding Cookies that we get from a local bakery so, I wanted to see if I could copy them. These were good but I made a few changes below that I will incorporate next time, including adding amaretto for more almond deliciousness.


Ingredients
  • 1 ½ cup salted butter organic
  • ¾ cup powder sugar
  • Optional: a couple tsp of amaretto
    5 tsp almond extract
  • ½ cup ground walnuts
  • , leave chunks for texture1 cup ground almonds
  • 3 cup all purpose flour

Steps
  1. Preheat your oven to 325”F.
  2. In a large mixing bowl cream together the butter and ¾ cup of the powder sugar until fluffy.
  3. Add the almond extract and little by little the ground walnuts and hazelnuts. Mix until combined.
  4. Start adding in the flour little by little until mixed in. ( For easier handling freeze or refrigerate the dough for 10 minutes or so)
  5. Prepare your largest cookie sheet and using a small spoon (or small ice-cream scoop) form the cookies into balls, the size of a golfball or smaller. You should have about 45 cookies.
  6. Arrange all the cookies on the baking sheet without touching each other.
  7. Bake the cookies in the preheated 325”F oven for 20 minutes.
  8. Remove the wedding cookies from the oven and allow them to cool off for a few minutes before rolling them over in the reserved powder sugar. It's best that they are still a little bit warm so the sugar coating sticks nicely.
  9. Arrange the cookies on a platter and dust with more powder sugar on top before serving.

Houston's Restaurant Copycat Spinach Dip

 If you have ever been to Houston's Restaurant and got their spinach dip appetizer, you will have experienced the heaven that is a cheesy warm deliciousness contrasted with salty tortilla chips. YUM! This is my attempt at copying them and, I think I did pretty well. I serve these in individual ramekins or in a french onion soup bowl.


You can freeze the leftovers. I spoon the spinach dip into muffin tins for individual servings and freeze them. When frozen, remove from muffin tins and wrap well in cling wrap and then aluminum foil and put in a bag. Pull out a serving or two and put in a ramekin and microwave until bubbly and hot. This is also delicious with eggs (don't knock it till you have tried it!)



  • 2 cartons frozen chopped spinach
  • 1 onion, chopped
  • 1 (14-oz) jar artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1 stick butter
  • 1 (8-oz) package cream cheese
  • ¾ cup heavy whipping cream
  • 8-oz shredded Monterey Jack cheese (I used Pepper Jack)
  • 4-oz shredded Swiss cheese
  • 4-oz shredded mozzarella cheese
  • ½ tsp cayenne pepper
  • salt & pepper to taste
