Asian Ramen Noodle Chicken Salad - Kona Grill Knock Off

    Fabulous dressing! Mark LOVED it and said it was the best recipe for salad yet. 

     Ingredients

    • 1 lb boneless skinless chicken breasts cooked and shredded or chopped OR 2 breaded chicken breasts, cooked & sliced
    • 2 oz packages dry ramen, broken into fine pieces (discard seasoning packets)
    • 1 cup sliced or slivered almonds
    • napa cabbage, shredded fine
    • 2 cups shredded tri-mix cabbage
    • 1 cup large carrot peeled and chopped into thin sticks 3/4
    • 4 green onions sliced
    • cilantro
    • edamame
    • 2 Tbsp toasted sesame seeds
    • DRESSING:
    • 1/2 cup olive oil
    • 1/4 cup + 2 Tbsp apple cider vinegar OR white wine vinegar
    • 1/2 cup granulated sugar
    • 1 1/2 Tbsp soy sauce
    • 1/2 tsp freshly ground black pepper
    • 1/4 tsp garlic powder
    • 1/4 tsp onion powder
    • 1/4 tsp dried ginger
    • 1 tsp garlic, minced
    • Salt to taste
    Steps
    1. Whisk together all of the dressing ingredients until well blended, microwave several minutes to dissolve sugar. Season to taste, set aside.
    2. Combine all ingredients. Drizzle dressing over top and toss to evenly coat. Serve immediately.
