Elle's Easy Thai Quinoa

Elle's Easy Thai Quinoa 

1/2 cup quinoa, cook according to directions
1/3 cup julienned carrots
1/3 cup shelled edamame
1/3 cup chopped green onions
Optional: chicken, chopped (I use Trader Joe’s Just Chicken)

2 Tbsp sweet chili sauce
1 Tbsp rice vinegar
1 Tbsp canned coconut milk
1/2 Tbsp brown sugar
1 tsp peanut butter
1 garlic clove
1 Tbsp reallime juice
1/8 teaspoon ground ginger

1/4 cup chopped peanuts
1/4 cup freshly chopped cilantro

Combine sauce ingredients together in a bowl.
Add in chicken, carrots, edamame and green onions, stirring to combine. Taste and season with a little salt and pepper if needed. Top with peanuts and cilantro.
